The Mistakes That Ruin Your Measurements

Cup measurements are imprecise by nature — but some mistakes are worse than others. These are the ones that actually affect your bake.

Scooping Flour Directly
If you dip the cup into the flour bag and scoop, you compact it. A scooped cup of flour can weigh 150–160g instead of 120g — 30% more than intended. Always spoon flour into the cup and level it off with a knife.

Not Packing Brown Sugar
Brown sugar must be firmly packed into the cup until it holds its shape when tipped out. Loosely spooned brown sugar gives you 30% less than the recipe intends. If it doesn't hold its shape, pack it harder.

Treating All Cups as Equal
A US cup is 240ml. An Australian cup is 250ml. An old UK cup was 284ml. If you're using a random mug from your cupboard, your measurements are meaningless. Use a proper measuring cup or just weigh everything.

Measuring Sticky Liquids in Cups
Honey, golden syrup, and treacle cling to the inside of a cup — you lose a significant amount. Weigh them instead, or lightly oil the cup first so the liquid slides out cleanly.

Cold Butter in a Cup
Packing cold butter into a cup leaves air gaps. You'll end up with significantly less butter than the recipe needs. Either soften it first, or better yet — just weigh it. 1 cup of butter is always 227g.

Whole vs Chopped Nuts
A cup of whole walnuts is 100g. A cup of roughly chopped walnuts is around 117g because the pieces pack more densely. When a recipe says "1 cup walnuts", it usually means whole or halved — chop after measuring.
