The Hidden Traps

Two mistakes that catch even experienced bakers out.

A fluid ounce measures volume — it's always 29.57ml regardless of what's in it. A weight ounce measures mass — and varies completely by liquid density. For water they're almost equivalent (1 fl oz ≈ 29.6g). For honey, 1 fl oz weighs about 42g. For oil, about 27g.

When an American recipe says "8 fl oz of honey", they mean a volume of 8 fl oz — which weighs around 340g, not 227g (which is what 8 weight ounces of honey would be). Always clarify which ounce a recipe means if it's ambiguous.
⚠️ Honey and Molasses Are Much Heavier Than Sugar

Recipes that substitute honey for sugar need to account for the extra weight and the extra moisture honey brings. The standard substitution is: use ¾ cup (255g) of honey for every 1 cup (200g) of sugar, reduce other liquids in the recipe by 60ml, and add ¼ tsp bicarbonate of soda to neutralise the acidity.

Molasses follows the same logic — it's similarly dense (about 340g per cup) and highly acidic. Never substitute it for sugar by volume without adjusting the rest of the recipe.
💡 ml and grams: when they're the same, when they're not
For water: 1ml = 1g exactly. This is how the gram was originally defined.

For milk, buttermilk, most dairy liquids: very close to 1ml = 1g — within 1–2%. Safe to treat them as equivalent for most baking.

For oils: 1ml ≈ 0.91g — oil is less dense than water, so 240ml of oil weighs about 218g, not 240g.

For honey, syrups, molasses: 1ml ≈ 1.4g — these are much denser than water. 240ml of honey weighs around 340g.

How many grams in a cup of water?
Exactly 240g — a US cup is 240ml, and water weighs 1g per ml. This is the baseline everything else is measured against.
How many grams in a cup of milk?
Approximately 242g for whole milk — very close to water because milk is mostly water. Skimmed milk is ~240g, condensed milk is ~312g.
How many grams in a cup of honey?
