The Leavening Problem

Small measurements, big consequences. Baking powder and bicarb are the two ingredients where teaspoon accuracy matters most.

Never substitute baking powder for bicarbonate of soda 1:1. Bicarb is approximately three times as strong as baking powder. If you substitute without adjusting, your baked goods will over-rise and collapse, or have a bitter chemical taste.

If you run out of baking powder, you can substitute with ¼ tsp bicarb + ½ tsp cream of tartar per 1 tsp baking powder required. This mimics the double-acting effect.

Why do these weigh differently? Baking powder contains cornstarch as a filler — it's less dense than pure bicarb. That's why 1 tsp baking powder = 4g while 1 tsp bicarb = 6g, even though they look identical in a measuring spoon.

A level teaspoon is filled to the rim and scraped flat with a straight edge. Every conversion on this page uses level measurements.

A rounded teaspoon has a natural dome of ingredient sitting above the rim. For baking powder, a rounded teaspoon weighs 50–75% more than a level one. Too much baking powder causes cakes to rise rapidly then collapse in the middle.

When a recipe says "1 tsp baking powder" — always assume level. Scooping straight from the tin without levelling is one of the most common causes of flat or collapsed cakes.
💡 Teaspoon Equivalents Every Baker Needs
3 teaspoons = 1 tablespoon — so if a recipe calls for 1 tbsp, use 3 level teaspoons.

½ teaspoon = 2.5ml and ¼ teaspoon = 1.25ml — both much easier to weigh than to measure by volume.

UK, US, and Australian teaspoons are all 5ml — unlike tablespoons, where Australian measures 20ml vs the UK/US 15ml. No adjustment needed when following teaspoon-based recipes from any of these countries.

A pinch is not a teaspoon — a pinch is roughly ⅛ teaspoon (about 0.3–0.6g of salt), used mainly for seasoning, not baking chemistry.
