⚠️ Weight Ounces vs Fluid Ounces — Completely Different Units

Volume — 29.57ml
Weight ounces (oz) measure mass — how heavy something is. Fluid ounces (fl oz) measure volume — how much space something takes up.

For water they're nearly identical: 1 fl oz of water weighs approximately 1 oz. But for anything denser or lighter than water, they diverge. 1 fl oz of honey weighs about 1.5 oz because honey is much denser than water.

When a recipe says "4 oz cream cheese" — that's weight. When it says "4 fl oz milk" — that's volume (approximately 118ml). Always check which type of ounce your recipe is using.
⚠️ UK vs US Fluid Ounces — Not the Same Volume

Weight ounces are identical in the UK and US. But fluid ounces differ slightly — the US fl oz is about 4% larger than the imperial (UK) fl oz.

For most recipes this difference is negligible, but it adds up in large quantities. 8 US fl oz (1 US cup) = 236.6ml, while 8 UK fl oz = 227.3ml. If you're following a US recipe with fl oz and you're in the UK, stick with the ml conversion rather than the fl oz number.
💡 The Mental Maths Shortcut
Exact: multiply oz × 28.35

Quick approximation: multiply oz × 28 — accurate to within 1.25% which is fine for most cooking (not ideal for precision baking).

Even quicker: oz × 30 — overshoots by about 6%, good enough for seasoning and rough estimates but not for baking.

For pounds to grams: multiply lb × 454 — or just multiply lb × 16 to get ounces first, then × 28.35.
💡 Avoirdupois vs Troy Ounces
All cooking and baking uses avoirdupois ounces (28.35g). You will never encounter the other type in a recipe.

Troy ounces (31.1g) are used exclusively for precious metals — gold, silver, platinum. If you've ever seen a gold price quoted in "oz", that's troy ounces. Food recipes always mean avoirdupois. You don't need to think about this unless you're buying bullion.
